| White Wines are made by quickly removing the juice from the berries by destemming and crushing them and then pressing them. Our press is a vertical bladder press and combines the old world gentleness of the vertical basket press with the automation of an air filled bladder to do the pressing. It sure beats running around in a circle for hours!! We strive to maintain low temperature fermentations to foster tastes and aromas that are true to our fruit and make top-notch, flavorful wines. |
