Red Wines
are made by coaxing flavors and tannins from the skins during a warm and often rapid fermentation. After the extractive fermentation, the skins are pressed out and the wine is set to clarify and age. Often, combining this aging process with the extraction and micro-oxigination that a barrel provides creates the best development. How long? One never really knows. At that point, all you can do is practice your patience...
